One of my friends made a version of this for me several years ago and it is now my go-to when I want something easy, moist and tasty! This chicken literally melts in your mouth! My entire family loves this recipe, and that's reallllly hard to do!

Ingredients
  • 1 cup Low Fat Mayonnaise (or half mayonnaise, half greek yogurt for a healthier option)
  • ½ cup grated Parmesan cheese + an additional ¼ cup for the top
  • 1 tsp garlic powder or seasoning salt to taste
  • 6-8 chicken thighs (1 large package)
Instructions
  1. Preheat oven to 375 degrees
  2. Spray or spread olive oil in the bottom of the glass dish (or use non-stick cooking spray)
  3. Mix the mayonnaise, ½ cup parmesan cheese, and garlic powder/seasoning salt
  4. Spread chicken thighs out in the bottom of the glass pan and spoon the mayonnaise mixture ensuring you cover all the chicken so that it stays moist
  5. Sprinkle the remaining parmesan cheese on top
  6. Cook the chicken for 40 minutes or until completely cooked through.
  7. Serve and enjoy!
